Stuffed Christmas M&M Cookie Sandwich Recipe

Everyone’s face lights up when they see a classic M&M Cookie, especially when it’s full of holiday cheer. Fill each soft and chewy cookie with a light and fluffy vanilla American buttercream and this Christmas M&M Cookie Sandwich will have you singing all the Christmas carols.

There is something about the holiday time and the way eating M&Ms make you feel. These cookies have M&M’s folded throughout the dough and then dipped in even more to make sure you get a mouthful of chocolate crunch with each bite.

Christmas M&M Cookie Sandwich Recipe

Ingredients

M&M Cookies:

  • 8 tbsp unsalted butter (1 stick or 113 g), browned
  • ½ cup dark brown sugar (100 g)
  • ¼ cup granulated sugar (50 g)
  • 1 egg, room temperature
  • 2 tsp vanilla bean paste
  • 1 tbsp milk
  • 1 ½ cups all purpose flour, spoon and leveled (180 g)
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 1 tsp salt
  • ½ cup chopped milk chocolate (80 g)
  • ⅓ cup mini holiday M&Ms (50 g)
  • ½ cup extra mini holiday M&Ms – for dipping the tops

Vanilla Buttercream Filling:

  • 3 tbsp unsalted butter, room temperature
  • 1 ¼ cups powdered sugar
  • 2 tbsp heavy cream
  • ½ tsp vanilla extract
  • pinch of salt

Instructions

M&M Cookies:

  • Add the unsalted butter to a saucepan and melt over medium heat. Continue cooking, stirring occasionally, until the butter becomes golden, smells nutty, and brown specks appear on the bottom (about 5–7 minutes). Remove from heat and let the browned butter cool for 10 minutes.
  • In a large mixing bowl, whisk together the cooled browned butter, dark brown sugar, and granulated sugar until smooth. Add the egg, vanilla bean paste, and milk. Whisk again until fully combined.
  • Add the flour, baking powder, baking soda, and salt. Stir just until the dough forms—do not over-mix. Fold in the chopped milk chocolate and ⅓ cup mini holiday M&Ms.
  • Scoop the dough into balls 12 equal cookie dough balls and roll them until smooth. Dip the tops of each dough ball into the extra mini holiday M&Ms so they stick to the surface.
  • Place the dough balls on a tray lined with tin foil or parchment paper and freeze for at least 30 minutes. This prevents spreading and helps the cookies bake thick and soft.
  • Preheat the oven to 350°F once the cookies have been in the freezer for about 20 minutes.
  • Arrange the chilled cookie dough balls on a baking sheet lined with parchment. Bake for 12–16 minutes, or until the edges are lightly golden and the centers still look slightly soft.
  • Allow the cookies to cool on the baking sheet for 10 minutes, then transfer them to a cooling rack to cool completely.

Vanilla Buttercream Frosting:

  • In a medium sized bowl, beat the softened butter until creamy. Add the powdered sugar, 1 tablespoon heavy cream, vanilla extract, and a pinch of salt. Beat until light, fluffy, and smooth.
  • Pair the cooled cookies by size. Pipe a generous layer of buttercream onto the flat side of one cookie. Gently press a second cookie on top to create a sandwich. Repeat with all remaining cookies and enjoy!
