This recipe is packed with wholesome ingredients, most of which are already in your pantry. There’s a big fear around healthy desserts tasting bad but this is a game changer. The taste of the chickpeas is nonexistent and it has the perfect balance of texture to give the impression of real cookie dough. Better yet, the equipment needed to make this is one food processor. ONE dish! What’s not to love about that?
Ingredients You’ll Need
- Chickpeas: Rinse, Rinse, Rinse! Make sure the chickpeas are thoroughly rinsed through to prevent any weird taste/texture. No need to cook the chickpeas!
- Almond Butter: Almond butter adds a rich, delicious flavor and creaminess. This helps binds the ingredients together to be more formed. Any seed or nut butter will work for this recipe to meet your tastebuds.
- Almond Flour: A nutrient rich ingredient that pairs well with almond butter, once again this can be swapped out (see notes).
- Sugar Free Syrup: Any liquid will work, the sugar free maple syrup is my go to choice for this. Honey or regular syrup will work, using these will cause the dough to be more on the sweet side.
- Vanilla Extract: Adds a delicious rich vanilla flavor.
- Salt: Just a touch to balance the taste.
- Lily’s Chocolate: My personal favorite for this treat to keep this on the healthier side. Any chocolate style will do, though! If you use bar chocolate, make sure you chop it prior to placing it in the food processor to help it be evenly spread throughout.

How to Eat Chickpea Cookie Dough
This dessert can be enjoyed in many different ways. The first time I made it I was dying to taste it so I dabbled in with a spoon and had NO regrets. Enjoy as a spread on toast, crackers, even pretzels. Or place in a bowl and serve as a dip with your favorite fruits!

Easy Healthy Chickpea Cookie Dough
Ingredients
- 1 can Chickpeas, 250g, drained and rinsed very well
- 1/4 cup Almond Butter, 60g, see note
- 1 tsp Vanilla Extract
- 1/4 cup Almond Flour, 30g, see note
- 1/4 cup Sugar Free Maple Syrup, 60ml, see note
- 1/4 cup Lily's Semi-Sweet Chocolate Bar, chopped
- 1/2 tsp Salt
Instructions
- Add all your ingredients (except the chocolate) to a food processor or a high – speed blender. Process until the chickpeas are smooth in texture and the mixture is a formed, scraping down the sides as necessary. I recommend turning the food processor on rather than pulsating the mixture to save time.
- Once ingredients are combined, add your chopped chocolate and process for about 10 seconds so you still have some chunks of chocolate. Transfer dough into a bowl for serving. Allow dough to chill in fridge for 30 minutes before enjoying, but if you're eager than grab your spoon and enjoy it immediately!
Notes
- Any chocolate (bar that’s chopped or chips) is fine. I like Lily’s Chocolate because it’s less sugar while still providing fantastic flavor.
- I prefer Almond Butter with this recipe but any seed and/or nut butter will work.
- Can substitute almond flour for oat flour, gluten-free flour, or any other flour to suit your dietary needs.
- I use sugar free maple syrup for this recipe, however, honey and regular maple syrup works perfect as well!
