Easy Healthy Chickpea Cookie Dough
This Chickpea Cookie dough is a versatile recipe to satisfy your sweet tooth along with your dietary needs. Made with creamy chickpeas, this dough is naturally gluten-free, protein-packed, and full of wholesome ingredients, so you can satisfy your cookie craving while fueling your body with goodness.

- 1 can Chickpeas, 250g, drained and rinsed very well
- 1/4 cup Almond Butter, 60g, see note
- 1 tsp Vanilla Extract
- 1/4 cup Almond Flour, 30g, see note
- 1/4 cup Sugar Free Maple Syrup, 60ml, see note
- 1/4 cup Lily's Semi-Sweet Chocolate Bar, chopped
- 1/2 tsp Salt
Add all your ingredients (except the chocolate) to a food processor or a high - speed blender. Process until the chickpeas are smooth in texture and the mixture is a formed, scraping down the sides as necessary. I recommend turning the food processor on rather than pulsating the mixture to save time.
Once ingredients are combined, add your chopped chocolate and process for about 10 seconds so you still have some chunks of chocolate. Transfer dough into a bowl for serving. Allow dough to chill in fridge for 30 minutes before enjoying, but if you're eager than grab your spoon and enjoy it immediately!
- Any chocolate (bar that's chopped or chips) is fine. I like Lily's Chocolate because it's less sugar while still providing fantastic flavor.
- I prefer Almond Butter with this recipe but any seed and/or nut butter will work.
- Can substitute almond flour for oat flour, gluten-free flour, or any other flour to suit your dietary needs.
- I use sugar free maple syrup for this recipe, however, honey and regular maple syrup works perfect as well!
