Easy Healthy Chickpea Cookie Dough

This Chickpea Cookie dough is a versatile recipe to satisfy your sweet tooth along with your dietary needs. Made with creamy chickpeas, this dough is naturally gluten-free, protein-packed, and full of wholesome ingredients, so you can satisfy your cookie craving while fueling your body with goodness.

Ingredients

  • 1 can Chickpeas, 250g, drained and rinsed very well
  • 1/4 cup Almond Butter, 60g, see note
  • 1 tsp Vanilla Extract
  • 1/4 cup Almond Flour, 30g, see note
  • 1/4 cup Sugar Free Maple Syrup, 60ml, see note
  • 1/4 cup Lily's Semi-Sweet Chocolate Bar, chopped
  • 1/2 tsp Salt

Instructions

  • Add all your ingredients (except the chocolate) to a food processor or a high - speed blender. Process until the chickpeas are smooth in texture and the mixture is a formed, scraping down the sides as necessary. I recommend turning the food processor on rather than pulsating the mixture to save time.
  • Once ingredients are combined, add your chopped chocolate and process for about 10 seconds so you still have some chunks of chocolate. Transfer dough into a bowl for serving. Allow dough to chill in fridge for 30 minutes before enjoying, but if you're eager than grab your spoon and enjoy it immediately!

Notes

  • Any chocolate (bar that's chopped or chips) is fine. I like Lily's Chocolate because it's less sugar while still providing fantastic flavor. 
  • I prefer Almond Butter with this recipe but any seed and/or nut butter will work.
  • Can substitute almond flour for oat flour, gluten-free flour, or any other flour to suit your dietary needs. 
  • I use sugar free maple syrup for this recipe, however, honey and regular maple syrup works perfect as well!
