Calling all eggnog LOVERS! If you love eggnog, these Eggnog Cookie Sandwiches will be your perfect match this holiday season. With a soft and chewy eggnog cookie that is perfectly paired with a spiced eggnog cream cheese filling, these will leave you dreaming of when you will get your next bite.
When the holiday season starts rolling around, the one thing I start my hunt for in the grocery store is eggnog. The original eggnog is the best (no judgment). Meaning that the dairy free, alcohol, light version of eggnog is just not it. These cookie sandwiches are the ultimate holiday treat because you get double the eggnog in every bite. The texture of the cookie will melt in your mouth, leaving you with hints of warm spices, a creamy eggnog flavor, and full of holiday cheer.



Soft Eggnog Cookie Sandwich with Creamy Spiced Eggnog Filling
Ingredients
Eggnog Cookies:
- Preppy Kitchen Eggnog Cookie Recipe (see notes for direct link)
Spiced Eggnog Filling:
- 3 tbsp unsalted butter, room temperature
- 3 ounces cream cheese, room temperature
- 1 ¼ cups powdered sugar
- 2-3 tbsp eggnog
- 1 tsp vanilla extract
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- pinch of salt
Instructions
Eggnog Cookies:
- Bake the cookies as directed through the preppykitchen website. Allow to cool completely before filling.
Spiced Eggnog Filling:
- In a medium sized bowl using a handheld mixer, beat together the butter and cream cheese until smooth in texture. Add the powdered sugar, vanilla extract, nutmeg, cinnamon, and a pinch of salt, then gradually add in the eggnog. Beat on medium, medium high speed until filling is light and fluffy.
- Chill for 10-15 minutes if the filling is soft. When cookies are cool, pipe or spread a generous amount of filling on the flat side of a cookie and then top with another cookie, flat side down. Enjoy immediately or chill until ready to serve.
