Eggnog Cookies:

Spiced Eggnog Filling:
- 3 tbsp unsalted butter, room temperature
- 3 ounces cream cheese, room temperature
- 1 ¼ cups powdered sugar
- 2-3 tbsp eggnog
- 1 tsp vanilla extract
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- pinch of salt
Spiced Eggnog Filling:
In a medium sized bowl using a handheld mixer, beat together the butter and cream cheese until smooth in texture. Add the powdered sugar, vanilla extract, nutmeg, cinnamon, and a pinch of salt, then gradually add in the eggnog. Beat on medium, medium high speed until filling is light and fluffy.
Chill for 10-15 minutes if the filling is soft. When cookies are cool, pipe or spread a generous amount of filling on the flat side of a cookie and then top with another cookie, flat side down. Enjoy immediately or chill until ready to serve.
